The Loyal dough docker is a 115 mm roller covered in spikes that pricks holes in rolled dough as you roll it across. Docking lets steam escape so pastry, pizza bases and crackers bake flat without bubbling or puffing.
It is much faster and more even than pricking by hand with a fork, which is why bakeries and pizzerias use one for every batch of tart shells, puff pastry sheets and flatbreads.

What does docking do?
It pricks small holes so steam escapes, keeping pastry, bases and crackers flat as they bake.
When should I dock?
Dock rolled dough just before baking, or before blind baking tart shells.
Do I dock puff pastry?
Dock puff pastry where you want it to stay flat, such as tart bases, and leave edges undocked to rise.
How do I clean it?
Brush off dough, then wash in warm, soapy water and dry it well.
Can I use it on pizza dough?
Yes. Docking thin bases stops large bubbles forming in the oven.
