It takes one full size 1/1 gastronorm pan, 65 mm deep. You can also use halves or thirds in the frame if they suit your menu.
What heat source does it use?
It comes with two fuel holders for chafing fuel cans. Light both for hot dishes and use one for gentler holding.
Do I need water in the base?
Yes. Add hot water to the water pan before lighting the fuel. The water spreads the heat evenly and stops food catching on the bottom.
How do I clean it?
Let it cool, empty the water and wash the pans and lid in the dishwasher or by hand. Dry well to keep the brushed finish looking good.
