The Everlasting BCE0004 is a 4 tray blast chiller and shock freezer that brings cooked food down through the danger zone fast, helping you meet food safety rules and cook ahead with confidence. It measures 652 x 706 x 540 mm and takes GN 1/1 trays only, a compact unit that fits under or on a bench in a small kitchen, cafe or bakery.
Chill from +90°C to +3°C or shock-freeze from +90°C to -18°C, finishing by core probe or by time, with hard or soft cycles to suit the food. When the cycle ends it switches to holding automatically. The interior is AISI 304 stainless steel with high-density insulation, and it is made in Italy by Everlasting.

Why do I need a blast chiller?
Cooked food needs to pass through the 60°C to 5°C danger zone quickly. A blast chiller does this far faster than a coolroom, which keeps food safer and holds its texture and colour, so you can cook ahead with confidence.
What trays does it take?
It takes 4 trays. This 4 tray model takes GN 1/1 only.
Probe or timed cycle?
Use the core probe for thick or dense food so the cycle ends when the centre reaches temperature. Timed cycles suit thin, consistent product such as biscuits or sliced items.
What power does it need?
It plugs into a standard 10 A outlet.
How do I clean it?
Wipe the stainless interior and tray guides with warm water and a mild detergent, keep the door seal clean, and keep the condenser free of dust and grease so it chills at full speed.
